Double chocolate avocado cookies (vegan friendly)

I absolutely adore avocados because they’re such a versatile fruit. They can be used on toast, in guacamole, with eggs, in mousse and in baked goods as a fat substitute. My favorite way to eat my avocados has got to be sliced and seasoned on a piece of toast in the morning for breakfast. As much as lil’ bun likes her guacamole, sometimes she gets tired of those things so we decided to bake cookies and replace some of the fat with mashed avocado.

Ingredients (makes 12):

1 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup cocoa powder
3 tablespoons oil
1/2 an avocado mashed
1/4 cup sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1/3 cup almond milk
1/2 cup chocolate chips

Whisk away:

1. In a large bowl, beat the avocado, oil, sugars and vanilla together. Sift in the flour, baking powder, salt and cocoa. Mix until combined.

2. Add in the milk and chocolate chips. Stir until just combined. Spoon the batter by the tablespoon onto a lined cookie sheet 2″ apart.

3. Bake at 350F for 10 – 12 minutes until they’re dry to the touch.

These cookies turned out perfectly fudge-y and melt in your mouth chocolate-y. In a way they were almost cake-y because of the smooth texture from the avocados. Plus, they added lots of healthy good monounsaturated fats to our cookies (:
