Well even with trying to eat healthy, sometimes a girl’s gotta have her cake and so, I tried to find a balance between the two by making carrot cake!
Carrots are known for their beta-carotene (an antioxidant) which gives them their nice orange colour. But what does that really mean? It means that these lovely root veggies are good for your eyes, cardiovascular health and has anti-cancer benefits as well! It might be a little odd for me to admire vegetables so much but I find it truly amazing how nature has the ability to pack so much nutrient into a small package. I mean eating merely a cup of carrots can already surpass your daily Vitamin A requirements!
Simple. Clean. Ingredients:
1 carrot blended
ground cinnamon, all spice, ginger, cloves to taste
Combine all the ingredients in a medium bowl and mix well, until a batter forms. Bake at 350F for 20-25 minutes. MUNCH!
