Cinnamon roll cookies (vegan friendly)

Lil’ bun had a friend over to work on a project and they finished early so lil’ bun asked me if we could bake something. She told me her friend liked cinnamon buns but we didn’t have enough time to make any. I felt bad that we couldn’t make any cinnamon buns for her so I tried to come up with a faster way to give her a treat she wanted. I ended up coming up with making swirl cookies with a sugar cookie dough base and cinnamon sugar filling similar to what you’d be doing if you were making those Rugelach cookies for Hanukkah.
Oh you want a close up of those beautiful swirls? Well, here you go!
Ingredients (makes 12):

1/4 cup oil
1/4 cup granulated sugar
1 tablespoon ground flax + 3 tablespoons water (or 1 egg)
1/4 teaspoon vanilla
1 cup whole wheat flour
1/4 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt


2 tablespoons brown sugar
1 teaspoon cinnamon

1. Combine the oil, flax egg, vanilla and sugar together in large bowl.


2. Sift the flour, baking powder, salt, and cinnamon into the mixture. If the dough feels too wet you can add in more flour.


3. Roll the dough out into a rectangle and sprinkle with the cinnamon sugar.


4. Roll the cookie dough up into a log and slice the log into  1 1/2 cm thick cookies with a knife; just as how you would do so with cinnamon buns.


5. Bake at 350F for 8 – 12 minutes until golden brown.

Lil’ bun told me that she thought that she could probably make these on her own some time because they were easier to make than actual cinnamon buns. Anyways, although these cookies started off being an experimental thing, they turned out absolutely awesome! Lil’ bun and I usually make fruit studded cookies so making a cookie with a smoother texture was a nice change. Lil’ bun’s friend was super satisfied with these cookies and in her words, “THEY’RE SOOO SOFT!” Lil’ bun also told me to mention how much she absolutely ADORES these cookies. She already ate four of them and told me she shouldn’t eat anymore because she already had “so many” but I told her it’s okay to indulge every once in a while plus they’re vegan how much healthier can they get?
