Chocolate torte with strawberries (vegan)

Oh my…my 400th post already and it hasn’t even been a year yet! Gosh, that makes me feel like I’ve been baking up a delicious storm these past 10 months! Anyways, in honour of my 400th post, I decided to design my own personal site banner! I’ve never editted any photos on the computer before or used photoshop to design/draw anything before in my life because I’m no tech-expert so I hope it looks okay! If it doesn’t…well I slept at 3am for nothing last night then ): But really, let me know what you lovelies think of it!

Sigh, it’s that wonderful time of the year again…strawberry season! In the past, I’ve baked with blackberries, blueberries and raspberries but I have yet to do anything with strawberries so I decided to give it a whirl by using one of the most classic combinations out there…chocolate and strawberry! Sorry for the short and sweet post intros lately, I’ve been needing to do more around the house now because both mother deer and lil’ bun are away, school’s been crazy and I’ve been working on a top secret project lately so that’s been taking much of my time too! More on that later so stay tuned!


Ingredients (one 6″ cake)

1 cup flour
1/4 cup cocoa powder
1/4 cup sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 cup oil
1/4 cup maple syrup
3/4 cup milk of choice
1 teaspoon vanilla
1 teaspoon apple cider vinegar
5 strawberries sliced

Bake away!

1. Combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.

2. Fold in the oil, maple syrup, milk, vanilla, and vinegar until just combined.

3. Line your 6″ cake pan with parchment paper and place your sliced strawberries along the base

4. Pour your chocolate batter on top of the strawberries and bake at 350F for 30 – 35 minutes until a toothpick comes out clean when inserted in the middle.Moldiv_1403893544176

5. I completely forgot to do this but…flip your cake upside down so that the strawberries are on top. You’ll want to do this right away or the moisture from the strawberries against the pan will create lots of steam resulting in mushy berries ):
