Blueberry bran cake (vegan)

READY FOR SOME BLUEBERRY BRAN GOODNESS?! I absolutely adore blueberries and love to freeze them in the summer time when they’re on sale and in season so I get to have them all year around. Anyways, these are full of fiber-y goodness and are lightly sweetened with brown sugar and blueberries.


Ingredients (makes 2 loaves or 1 pan):

2 cups whole wheat flour
1/2 cup wheat bran
1/2 cup oat bran
1/2 cup brown sugar
1/4 cup ground flax seeds
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cup milk of choice
1/3 cup oil
3 tablespoons honey or agave
2 teaspoons vanilla
1 tablespoon apple cider vinegar
1 cup blueberries (preferably frozen)

sliced almonds for topping

Make some magic:

1. Combine the flour, brans, sugar, flax, baking powder, and salt in a large bowl. Stir in the milk, oil, honey/agave, vanilla, and apple cider vinegar until just incorporated. Fold in blueberries.


2. Bake at 400F for 45-50 minutes (loaf) until golden.
