Banana quinoa bake (clean eats/gluten-free)

I totally saved the best for last because on this final day of the whole clean eats series…I present to you Banana quinoa protein bake! Well, not that I’m not going to post clean recipes anymore but this post concludes my 30 straight days of clean eat posts. Anyways, I absolutely adore this bake because it tastes EXACTLY like BANANA BREAD! And if you’ve known me for a while now, you’d know that banana bread is hands down my most favorite pastry of all time and this is the most perfect alternative to it! Not to mention that it’s packed full of protein so it’s the perfect thing for me who’s lacking in it to have!

For a vegan version, use a flax egg, another banana or egg replacer. If you’re not gluten free you can use oats instead of quinoa as well. And, if you’re a peanut butter lover, feel free to add some of that in there instead of the cinnamon (:

I can’t even begin to tell you how AMAZING this smelled when it was baking in the oven. As a matter of fact, I think the absolute hardest part about this entire recipe was how hard it was to wait the whole 25 – 30 minutes for it to be done!
