Avocado toast/guacamole (clean eats/vegan)

April 3, 2014

We had an excess of avocados lying around at home so lil’ bun decided to go green and make some avocado toast. I like my avocado toast to be topped with a bunch of goodies but since I was sharing with lil’ bun, I couldn’t get too excited. Anyways, not only do avocados taste good, but they’re good for you too! Avocados have polyphenols and flavonoids that help reduce inflammation in your body. They’re also an extremely heart healthy food because they’re high good fats that help regulate blood sugar levels and folate which lowers stroke risk. Like carrots, avocados contain carotenoid lutein to keep your eyes in tip top shape. Avocados aren’t just for eating anymore, they’re also good for your skin because they reduce redness. So, what’s not to love about this well rounded fruit?

Simple. Clean. Ingredients.

1 avocado
lemon juice, salt, chili flakes, hot sauce to taste

adventurous additions: add chopped tomatoes, cilantro, onion, hot peppers

Cube the avocado and then mash it a few times in the bowl (we like ours to be chunkier). Add in the lemon juice and seasonings as well as the additions if you like. Eat with chips or as a spread in a sandwich (:
