Blissballs are a amazing way to satisfy your sweet tooth cravings as well as give you that extra boost of energy you need to fuel yourself during the day. They’re a little like energy bars in ball form because they’re primarily made out of dried fruit and tend to be quite high in sugar…which of course, spikes your insulin as well as energy levels. I don’t have them too often because I don’t like shooting my sugar levels up like that but every now and then, I don’t mind having a couple as an on-the-go mid-day snack in between meals.
Simple. Clean. Ingredients. (makes 8)
1/2 cup almonds
3/4 cup walnuts
3/4 cup dried apricots
Blend everything together in your blender or food processor
Scoop your mixture by the tablespoon and then roll them into balls. Then either munch them as is or roll them in toppings such as hemp seeds, flax seeds, almond flour, chia seeds, coconut flakes or whatever you fancy.
