Mother deer bought a box full of apples the other day because they were on sale and whenever there’s a sale on fruit, we’re sure to stock up! Anyways, like I mentioned in previous posts, I adore apples but don’t like pie so I tend to make apple pie inspired goodies instead. And since lil’ bun and I are still on our bar making kick, we decided to make apple pie inspired granola bars! Even though we’ve made granola bars a lot lately…they haven’t been exactly the healthiest version because we’ve been sweetening them with brown sugar. So this time we experimented and tried sweetening it more naturally by using honey and chopped fruits instead. (:
1 cup flour
2 cup oats
1/4 teaspoon salt
1/2 cup oil
1 tablespoon ground flax seeds + 3 tablespoons water (or 1 egg)
1 teaspoon vanilla
1 apple peeled and chopped
1/2 cup chopped walnuts
1/4 cup chopped dried figs
1/3 cup honey or agave
2 teaspoons cinnamon
Mix mix mix!
- Combine the flour, cinnamon, oats, and salt in a large bowl. Add the oil, flax egg and vanilla. Then stir in the walnuts, figs and apples. Transfer into a baking pan and press everything in.
- Bake at 350F for 25 – 30 minutes until the bottom is golden brown.
- Let them cool for 2 hours before cutting them into bars and munch!
Being the eager beavers we are…we ended up cutting into the bars a “tad” earlier than we were supposed to and a few of our bars didn’t hold together well. ): Oh well, we’ll be sure to wait longer next time if we can but until then, we’ll enjoy those pieces as granola on top of cereal. Which really isn’t too bad of an alternative because yogurt and granola is super yum too!
