New to the kitchen and baking world? No worries! This recipe for sweet potato bars is as easy as pie and perfect for all beginners out there who want to make a decadent dessert without all the fuss.

Because all you really need for this recipe are the ingredients, a blender, a container, a fridge and a whole lot of patience…while it firms up in the fridge.

I don’t know about you but I LOVE sweet potatoes. Like I could probably eat them everyday and never get tired of them.

I mean they are just so versatile and there are so many varieties of them to explore! But did you know that the tuber we know as yams are actually just orange sweet potatoes?

Real yams look nothing like what we know as “yams” here in North America! How’s that for a food for thought?

Anyways, that’s a little besides the point so let’s get into the important part…the recipe itself!

One of my favorite things about this little creation is that everything can be prepared in a food processor or blender. Yup, that’s right. All you need to do to make these bars is pop all the ingredients into a machine, blitz it up, pour it into a container, let it sit for a couple hours and then you’re done!

Super easy right? 🙂

Best no-bake crust ever!

As if the simplicity of the recipe isn’t enough to entice you already, here’s something else that I absolutely adored about these bars (other than the fact that it’s made out of sweet potatoes), THE CRUST!

OH MY STARS. THIS CRUST TURNED OUT AMAZING.

It was perfectly chewy, spiced and could totally stand alone to be eaten (by the handful) as no bake cookies! I swear I could probably eat this crust all day. 😛

Actually, I think I might just make another batch of this crust, add in a scoop of protein and use them as a workout fueling energy bite!

But I digress, the point is, these bars are insanely easy to make, perfect for satisfying both your savory and sweet teeth, as healthy as dessert can get, and packed full of nutrients from all the whole food ingredients it has.

No-bake sweet potato bars recipe

Ingredients

  • 1 1/2 cup raw almonds (or more oats)
  • 1 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 1 tablespoon chia seeds or ground flax meal
  • 1/4 cup water or milk of choice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons coconut cream (or Greek yogurt)
  • 1 1/2 cup mashed sweet potato (or pumpkin puree)
  • 2 tablespoons chia seeds or ground flax meal
  • 1/3 cup maple syrup (or honey)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon pumpkin pie spice (optional)
  • 1/2 teaspoon vanilla

Instructions

  1. Place the first 7 ingredients in a food processor or blender and pulse until combined. Pour the mixture into a greased or lined 8″ x 6″ baking pan. Press it down evenly with your hands to create the base.
  2. In a large bowl, whisk the coconut cream, maple syrup, cinnamon, ginger, pumpkin pie spice and vanilla together. Stir in the mashed sweet potato. You can use the food processor for this as well if you like.
  3. Pour the sweet potato mixture on top of the oatmeal base. Refrigerate the bars for 3 hours or until firm.
  4. Slice and enjoy.
