Collagen granola clusters

These collagen granola clusters not only pack a protein punch but they have the perfect amount of crunch! Eat these collagen granola clusters as a bar, as cereal or on it’s own!

I’ve been on the hunt for a good granola recipe for a while now but have yet to find the perfect one! Sometimes they have too many ingredients and other times there’s nut butter which makes it difficult for me to bring to work. So, I decided to come up with my own and they turned out pretty great!

Granola must haves

The two big things I wanted my granola to have was crunch and protein. I decided to bake my granola in the oven to add a crispy texture and collagen peptides for protein. You can substitute other protein powders if you would like but I find that collagen peptides don’t influence the flavor of the granola.

My granola recipe only has 6 ingredients which makes it sooo much easier to make because most of these things might already be in your pantry! Even though I chose to add protein powder to my granola, it’s not a mandatory ingredient so you can always leave it out if that’s not your thing.

I’ve tried my granola with currants and dates as the dried fruit to add sweetness. I found that it was crunchier when I used currants because the dates added some moisture to the granola. Play around with it and let me know how you decided to mix it up!

Collagen granola clusters
Recipe Type: Breakfast
Serves: 4 cups
These collagen granola clusters not only pack a protein punch but they have the perfect amount of crunch! Eat them as a bar, as cereal or on it’s own!
Ingredients
  • 1 1/2 cup oats
  • 1/4 cup chocolate chips
  • 1/2 cup dried fruit
  • 3 tbsp collagen powder
  • 1/3 cup honey
  • 3 tbsp coconut oil
  • optional: 1/2 tablespoon cacao powder or matcha powder
Instructions
  1. Preheat oven to 425F
  2. Melt the coconut oil and honey in a large bowl.
  3. Stir in the oats, chocolate chips, dried fruit, collagen powder and cacao/matcha powder if using. Everything should be coated with the coconut oil and honey mixture.
  4. Once coated, spread out onto a lined cookie sheet.
  5. Bake at 425F for 10 minutes. Remove the tray, stir and return it back into the oven to bake for another 10 minutes.
  6. Let cool and break apart into desired pieces
